Wine 2:  Tenuta Santa Anna Prosecco

The terroir is a moderately deep and alkaline silt-clay soil, typical and characteristic of the Veneto plain. It rests on a very ancient layer - a paleosol- called "caranto". The climate is generally temperate and humid thanks to the proximity of the sea, but there are strong temperature variations due to the alternation of cool winds (Bora) and hot-humid winds (Sirocco). Winemaking / Vinification takes place with soft crushing and pressing with rapid separation of the must from the skins. The must ferments in steel tanks at a controlled temperature of 15-16 ° so as to preserve the original aromas. Once the alcoholic fermentation has been carried out, the second fermentation is carried out in an autoclave. The sparkling wine making with the Martinotti method lasts for 40 days.

Tasting Notes: Acacia flowers, apple, pear

Pair With: risotto, fried foods
