Wine 1: arnaud de Villeneuve Abre 5 year

Rivesaltes' Ambré Tradition 5 Years is a vin doux naturel (VDN) produced from Grenache Blanc, Grenache Gris and Macabeu sourced from the Languedoc wine region. The wine is matured in vats for three years and then in barrel for two years. VDN is a sweet, alcohol-fortified wine meaning an addition of alcohol is added to the wine to arrest fermentation of the must. Called “mutage”, this method dates back to the physician and scholar Arnaldus de Villanova (1240 – 1311), who recognized that a certain level of alcohol in the wine stops the fermentation process and preserves the natural sweetness of the wine. Look for dried stone fruit, nutty caramel and mineral flavours

Wine 2: Cockburns White Port

White Heights is a fragrant, high-grade, slightly drier white port produced from the top 10% of grapes from the high-altitude vineyards of the Favaios sub-region of the Douro Valley, giving it more acidity, freshness, and lift than other white ports. Fresh tropical fruit flavours such as papaya and pineapple lead the way, supported by light aromas of honeysuckle. Crisp yellow plum and pear notes finish with a touch of vanilla.White Heights is full of surprises. Versatile and refreshing, White Heights’ floral aromas and slightly drier profile make it perfect for simple serves and cocktails like our signature Port & Tonic.
